Breakfast Pudding

Makes 6 servings

Ingredients

1 1/2 cups quick cook oatmeal
2 1/2 cups soymilk, vanilla flavored
1/2 cup currants (or other chopped, dried fruit)
2/3 cup unsweetened applesauce
3/4 cup lemon-flavored fat-free yogurt
1 ripe banana, sliced (mix slices with squeeze of lemon juice)
1 small orange, peeled and chopped (or other chopped fruit such as mango, peaches, apples, berries)

Directions

  1. In a large saucepan, combine oatmeal and soymilk, and cook for 3 minutes.  The soymilk replaces the water. 
  2. Add fruit, applesauce, yogurt, and chopped oranges.  Stir gently to heat. 
  3. Add the sliced banana. 
  4. Serve warm or chilled.  This pudding can easily be reheated in the microwave. 

Consider adding ground cinnamon, nutmeg or other spices of choice for variety and flavor.
