Breakfast Sausage

Makes 6 servings

Ingredients

1/2 pound ground chicken or turkey breast
1/2 pound ground pork
1/3 cup peeled, diced red apple
2 Tbsp fresh, diced onion
1 Tbsp maple syrup
2 tsp dried sage
1 tsp salt
1/2 tsp black pepper
1/2 tsp minced, fresh garlic
1/2 tsp cayenne pepper, or to taste (optional)

Directions

  1. If unable to find ground chicken breast, place 1/2-pound chicken breast, cut into 1-inch cubes, into food processor with all other ingredients. Pulse until mixture is finely chopped. If you prefer, omit pork and use 1 pound ground poultry breast and 1 1/2 Tbsp olive oil.
  2. Otherwise: In a medium bowl, combine ground poultry and pork with all other ingredients and mix well.
  3. Make patties using 1/3 cup meat mixture for each.
  4. Place in a large sauté pan over medium heat until cooked through, about 3–5 minutes each side, or until golden brown.
