Egg and Sausage Breakfast Sandwich
Ingredients
1 whole wheat English Muffin
1 soy breakfast patty (Morning Star or Boca Burger)
1–2 eggs, slightly beaten, or 1/4 cup Egg Beaters
Seasonings, optional (salsa, chopped red bell peppers, green onions, cilantro,
etc)
1 slice cheese, optional
Canola or olive oil spray
Directions
- Using a 6–10 oz ramekin dish, spray lightly with a canola oil or olive oil spray.
- Place 1 soy breakfast patty in the bottom and cover completely with egg or Egg Beaters. Be sure to break the yolk!
- Cook on high in microwave for 90 seconds to 2 minutes (depending upon power of microwave) until egg is completely cooked. Egg will puff up considerably while cooking, but will collapse when pulled out of microwave.
- While egg and sausage are cooking, toast English muffin.
- When egg is ready, turn ramekin upside down onto 1 half of the English muffin (use hot pad or oven mitt as ramekin may be very hot.)
- Place 1 slice of cheese over top egg. Cover with other half of English muffin. May need to microwave another 15–20 seconds to melt cheese.
Consider a spread on one half of the English muffin, such as salsa, Dijon mustard, Miso Mayo, Onion Garlic Spread, hummus, or Canola oil mayonnaise. Also freely add fresh herbs and spices, such as fresh basil, dill, cilantro, etc.
