Apple Crisp
Makes 12 servings
Ingredients
4 cups baking apples (Fuji, Braeburn, Macoun…), peeled, cored, and cut into thin slices
Juice of one half lemon, to keep apples from browning
2 1/2 Tbsp small pearl tapioca
1 tsp cinnamon
3/4 cup brown sugar
1/4 cup thawed, unsweetened apple or orange juice concentrate
1/3 cup whole wheat flour
3/4 cup dry rolled oats
1/4 tsp baking soda (optional)
Pinch salt
1/4 cup brown sugar
1 tsp. grated orange or lemon peel, optional
1 tsp. thawed, apple juice or orange juice concentrate
3/4 tsp. cinnamon
Dash nutmeg
4 Tbsp. melted butter or canola oil
Directions
- Preheat oven to 350 degrees. Spray 9” x 13” baking dish lightly with canola oil and set aside.
- In a small bowl combine fruit with first 4 ingredients, tossing until fruit is well coated. Pour into prepared pan and set aside.
- In another bowl, combine flour, oats, baking soda, salt, brown sugar, orange peel, juice and spices. Gradually stir in melted butter or oil and mix until mixture resembles coarse crumbs. Sprinkle evenly over fruit.
- Bake 30–45 minutes or until topping is lightly browned.

- Cinnamon, nutmeg, ginger and cardamon are versatile spices that can be included in all combinations
- Apple juice concentrate will add sweetness without compromising flavor profiles
- Orange juice concentrate can be substituted for apple juice concentrate to vary the flavor, or try grated orange or lemon peel in the topping
