Crispy Baked Chicken

A quick recipe that is delicious and easy! Serve with boiled red potatoes tossed in olive oil and fresh basil, steamed green beans with garlic, and a green salad.

Makes 4 servings

Ingredients

1 pound chicken breast
1 tsp. olive oil for baking dish
2 Tbsp. olive oil (or salted butter)
1 cup breadcrumbs (or corn flakes, rolled into bread crumb consistency)
½ cup grated parmesan cheese (optional)
1-3 Tbsp. fresh herbs of choice
Sea salt, to taste
Pepper, to taste

Directions

  1. Preheat oven to 375 degrees.
  2. Use olive oil to grease baking dish.
  3. To make bread crumbs, place stale bread or corn flakes in a Ziplock bag and roll with a rolling pin into bread crumb consistency (or use ready-made bread crumbs).
  4. Heat olive oil in sauté pan over medium heat. Add fresh herbs of choice (chopped parsley, basil, oregano, and garlic). Cook for just a couple minutes, and remove from heat.
  5. Brush oil-herb mixture over each chicken breast. Sprinkle each breast with salt and pepper. Roll in bread crumbs, covering well, and place in baking dish.
  6. Bake for 35 minutes.
  7. Sprinkle parmesan cheese over top each chicken breast before serving, if desired.

Options

To cook chicken more quickly and evenly, pound with meat tenderizer until breast is of equal thickness. Roll in bread crumb mixture and bake for 15-20 minutes. Careful not to overcook as chicken will dry out more quickly with this method.

To make a lower calorie dish, use egg white instead of butter to dip chicken into before rolling in bread crumbs. Use dried herbs instead of fresh herbs, using ¼ tsp each.
