Two-Minute Pizza
Ingredients
1 whole wheat pita, partially sliced into two halves, but not cutting through the bottom layer
1/3 cup grated mozzarella cheese
1/3 cup pizza sauce (or pesto, marinara, BBQ, etc.)
Toppings: Canadian bacon (nitrite/nitrate free), sliced tomato, pineapple chunks, grilled vegetables, meatless sausage (such as Boca Burger Italian sausage), spicy black bean burger (crumbled), grilled chicken, etc.
Fresh herbs: basil, cilantro, chives, etc.
Directions
- Open pita and fill lightly with mozzarella cheese.
- Spread pizza sauce on top of pita and top with desired toppings.
- Microwave on high for 1 minute, or place under broiler until cheese melts.
