Beef Fajitas

Makes 4 servings

Ingredients

1 pound all-natural flank steak, sliced into stir-fry strips
1 packet dry fajita sauce seasoning (such as Seeds of Change), or use pre-made sauce in a jar
1 yellow onion, cut into 1/4-inch slices
1 red bell pepper, cut into 1/4-inch slices
1 cup shitake mushrooms, sliced in half
Corn tortillas
1 avocado, sliced into thin strips
Low-fat cream cheese, optional
Fresh salsa, optional

Directions

  1. In a medium sauté pan over medium high heat, add yellow onions and sauté 2–3 minutes.
  2. Add beef and begin to brown. Add seasoning packet and follow directions on how much liquid to add, or use pre-made sauce.
  3. Add bell pepper and mushrooms and cook about 3-5 minutes, or until desired texture.
  4. Place corn tortillas on a plate, cover with paper towel, and microwave 1–2 minutes, until heated through.
  5. Serve with avocado slices, low-fat cream cheese, and fresh salsa, if desired.
