Watermelon-Lime Freeze
Ingredients
4 cups watermelon cubes, seeded
1 cup undiluted limeade, slightly thawed
1 1/2 cups cold water
2 Tablespoons sugar (optional)
8 fresh lime slices for garnish (optional)
Directions
- Cut the watermelon in half lengthwise. Then, with the flat side down, cut slices 2 inches thick. Cut away the rind and cut each slice into 2-inch cubes. Remove any seeds.
- Place the watermelon cubes in a plastic container and freeze for 4–6 hours, until solid.
- Allow limeade to thaw at room temperature until you can scoop it from the can.
- Cut thin slices of lime for garnish, if desired.
- Place 2 cups of the frozen watermelon cubes in the blender. Add 1/2 cup limeade concentrate (do not reconstitute limeade) and 3/4 cup cold water.
- Blend on high speed until smooth and icy. Scrape the sides of the blender with the spatula several times during blending to make sure all ingredients are well mixed.
- Taste.
- Add sugar if desired, and blend again.
- Pour into glasses and serve immediately or freeze until ready to serve. Garnish with fresh lime slices, if desired.
- Repeat blending steps with remaining ingredients.
