Watermelon-Lime Freeze

Ingredients

4 cups watermelon cubes, seeded
1 cup undiluted limeade, slightly thawed
1 1/2 cups cold water
2 Tablespoons sugar (optional)
8 fresh lime slices for garnish (optional)

Directions

  1. Cut the watermelon in half lengthwise. Then, with the flat side down, cut slices 2 inches thick. Cut away the rind and cut each slice into 2-inch cubes. Remove any seeds.
  2. Place the watermelon cubes in a plastic container and freeze for 4–6 hours, until solid.
  3. Allow limeade to thaw at room temperature until you can scoop it from the can.
  4. Cut thin slices of lime for garnish, if desired.
  5. Place 2 cups of the frozen watermelon cubes in the blender. Add 1/2 cup limeade concentrate (do not reconstitute limeade) and 3/4 cup cold water.
  6. Blend on high speed until smooth and icy. Scrape the sides of the blender with the spatula several times during blending to make sure all ingredients are well mixed.
  7. Taste.
  8. Add sugar if desired, and blend again.
  9. Pour into glasses and serve immediately or freeze until ready to serve. Garnish with fresh lime slices, if desired.
  10. Repeat blending steps with remaining ingredients.
