About Anita Bancroft, RDN, CC

Anita attended Colorado State University and earned a Bachelor of Science in Nutrition and Food Science with a concentration in Dietetics and Nutrition Management and a Gerontology Interdisciplinary Minor. She is a classically trained chef who underwent a 3-year culinary apprenticeship to obtain the Certified Culinarian (CC) certification from the American Culinary Federation. Anita also earned an Associate of Applied Science degree in Culinary Arts and worked for over 10 years as a chef.

Anita's passion has always encompassed food, which led her to expand her knowledge to include nutrition and pursue a career as a Registered Dietitian Nutritionist (RDN). Her extensive culinary arts background generated her goal of teaching culinary skills as a tool to establish and maintain a healthy lifestyle. Anita recognizes the importance of individualized nutrition education, which piqued her interest in working with nutritionally at-risk clients and those seeking assistance with maintaining or improving their overall health. By utilizing her culinary and dietetics degrees collaboratively, Anita plans to impact her clients through health promotion, disease prevention, and personalized nutrition education.

To help support clients with overall digestive wellness, Anita is preparing to sit for the exam to become a Certified Gastrointestinal Nutritionist after recently completing the GI Dietitian's Roadmap course through the SIBO Academy.

Anita is a Colorado native who enjoys Pilates, yoga, rock climbing, hiking, and camping when she is not working.
